History of the Bellini
The Bellini was invented by Giuseppe Cipriani
who was the founder of a bar in Venice, Italy. Sometime between
1934 and 1948 he created the mixed drink at his bar, Harry's
Bar. He got the name Bellini from the unique color of the drink.
The pinkish color reminded Cipriani of the toga worn by a saint in
a painting by artist Giovanni Bellini. The drink was a seasonal
favorite at Harry's Bar and the bars New York counterpart until a
way was developed to ship fresh peach puree to both bars. After
that point it became a year round favorite.
The original drink contained pureed white
peaches and an Italian sparkling wine called Prosecco. It also
contained a splash of raspberry or cherry juice to give it the
characteristic pink hue. Today there are many different variations
of the drink.
